Pork Pad Thai is not typical. It’ll be very hard to find. Typically it’a shrimp.
Boat noodles get their name because they were traditionally sold from boats along the waterways.
Most Thai people love to eat shrimp pud thai not pork , this is why normally no pork in the pud thai shop.
Before eating any single dish food that you never have eaten , you should ask the way to eat first. Eating without properly way will keeps you away from truly testing its deliciousness. The dark sauce in the small cup is the key component that brings out the delicious flavor of the chicken rice.

Seems like that driver who said pad thai was just recommending you anything. I feel like he probably said Pad Thai because that seems like all westerners eat or know of when it comes to Thai food. Btw, I love boat noodles! Not sure if yall knew, but the broth is made with pork blood, so it grosses a lot of people out once they know how it's made. It's so good though!

seems like the local gave you the wrong recommendations. Khao Mun Gai must eat with spicy sauce and Pad Thai with Pork is difficult to find because most of restaurants have only shrimp or chicken option.
7-11 have a signature is ham cheese sandwich.
The guy recommended pad thai with pork is kinda weird. since we, thai people, usually have pad thai with tofu or shrimp.

Very fun video, kids. It’s wonderful to observe two open-minded American budding foodies tasting the delights of khao soi and boat noodles for the first time! My wife and will be visiting Chiang Mai in December, and maybe we should follow a similar plan to explore new items. But we’re 60 and lack your youthful energy haha, and we also can’t eat seven dishes in one day anymore.

For Khao Man Gai, the highlight is the dipping sauce. Without it, the only flavors you'll taste are the oily rice and the boiled chicken. As for Boat Noodles, what makes their rich flavor unique compared to other noodle dishes is the dark-colored broth. And you should know that the broth is made from blood, but that's something everyone who tastes it seems to like. But you have to try it to know for sure. The reason it's called "boat noodles" is because, in ancient times, this type of noodle was sold from rowing boats. In ancient times, since the old kingdoms, water travel was the primary mode of transportation. All markets were floating markets. The first land-based market was Nang Leong Market in Bangkok, which has only been around for less than 150 years. Boat noodles are served in small bowls.😂
I love your content. Thanks for being open minded in trying the food. Just know Thai spicy is not the same as western spicy. As for the khao mun gai, different restaurants have different dressing to put on top of the chicken. My favorite is isaan Thai food which is more umami / pungent.

Khao Soi especially the one with the whole curry style soup is very distinct of Northern Thailand. Back here in the states, the majority of Thai restaurants are "Southern" focus and thus when people visit Thailand, they are surprise to see that there are more variety than they had anticipated or different from what they are used to back home. Yes, spice in terms of spicy is normal for many Thai people. I am from the bay area and was in Thailand a few weeks ago for "calling in sick from work" to just relax and chill.
