Exploring the lush forests and mountains around Chiang Mai on my motorbike was an unforgettable adventure. I started the journey with a steaming bowl of authentic Khao Soi noodles before heading into the highlands, where misty roads led me to hidden gems and unique stays. One of the highlights was discovering Putoh, an incredible eco-retreat nestled deep in nature, where I spent three nights surrounded by the sounds of the forest.
Along the way, I stumbled upon a cozy coffee shop perfect for a morning break and later relaxed at hidden hot springs tucked away from the crowds. For a taste of local craft culture, I stopped at Microcosmos Craft Beer, where the mountain atmosphere pairs perfectly with a cold drink. Riding deeper into the countryside, I enjoyed a delicious meal at a small local restaurant, connecting with the authentic flavors of Northern Thailand.
The adventure ended with visits to two incredible landmarks – the ethical Elephant Nature Park, where rescued elephants roam freely, and the stunning Wat Ban Den, a temple complex unlike any other in the region. This ride through Chiang Mai’s forests was filled with magical moments, from hidden natural wonders to cultural treasures. If you’re planning your own escape to this part of Thailand, these spots should definitely be on your list!

Wife and I have been following you for years. Love the channel and content. We’ve decided to visit Thailand in Jan for a few months before heading back to our boat in Italy. I have a question? It relates to your water consumption!!! And yes it’s great the amount you drink. Have you or do you ever use a hydration pack? Only having to grab the tube to hydrate instead of grabbing your bottle all the time? Just an idea could reduce the number of water fillup stops you make when on the bike exploring? 😊 keep up the great work mate 🙏🏻
I planned the vast majority of a 20 day trip based on Paddy's recommendations, and Chiang Dao and the old city of Chiang Mai were the most amazing experiences of the whole trip. I completely agree with him when he holds Northern Thailand in higher regard to the south. I love the south too, but Chiang Mai province is simply majestic. Thank you so much Paddy!

For me, the art of eating Mookrata is about savoring the moment and the people right in front of you. Next time you eat it, you should have at least one person with you. Then, instead of dumping all the pork onto the grill at once, try slowly grilling it piece by piece. Try to grill that one piece to your own definition of perfection. Take your time with it, talk with those around you, and perhaps you'll enjoy it even more.
